Contrà del Tono – Valpolicella Superiore Classico
Contrà del Tono is a permanent seal of Valpolicella Classico.
Grapes: Corvina gentile, Corvina grossa, Rondinella e Molinara
The Press: soft in an horizontal press at low temperature.
Fermentation: Vinification in steel with a checked temperature and a following soft CRIOMACERAZIONE with FOLLATURE by hand.
Ageing: Before 8 months and then in the bottle 5 months before being put in the market.
Pairings: Great with spicy cold cuts of the antique tradition of Veneto but also with half maturation cheese, better if from the cows. It’s also ideal with first course with white meat or red souses. With soups typical of the tradition of Toscana made with cereals, legumes, chickpeas, beans white and borlotti and cicerchie.
Serving temperature: 12 – 15 C°
