our salt, sometimes called white gold, comes only from the most ancient saltworks in the world, that is those in sicily. already in the xxi century b.c the phoenicians spoke highly of it and described its excellent properties. our salt is produced in very large tanks put in the sea, and it is nature’s action of wind and sun that causes the evaporation of the water, leaving the chrystals at the bottom of the tank. these contain many trace elements such as potassium, magnesium and iodine. these chrystals are then gathered, washed, sifted ( separating the coarse variety from the fine one, dried and packed.
