VINIFICATION
the grapes are destemmed and then softly pressed and the must obtained is clarified by decanting. The fermentation takes place for about 20% of the must in medium-toasted french oak tonneaux and the remaining in stainless steel tanks

6 – 8 months: about 20% in medium toasted french oak tonneaux and the remaining in stainless steel tanks
6 – 12 months: in bottle
CHARACTERISTICS
colour: golden yellow with copper reflections; nose: fresh, fruity, intriguing and extremely pleasing, with notes of rennet apple, apricot and pear
BOUQUET
on the palate it displays a good structure, it is sapid and persistent with a balanced acidity that accompanies all the tasting in a succession of sensations that bring us back to the olfactory notes enriched with sweet notes of custard, fresh hazel nut, confectionary sugar
PAIRINGS
as an aperitif, with the fruit, starters and fresh cheeses, summer soups, delicate seafood and meat dishes. Aged 2-3 years it is a perfect pair with any interpretation of white meats
