Cerasuolo d’Abruzzo is a rosé wine, produced with Montepulciano vine variety in the context of the homonymous DOC (Cerasuolo d’Abruzzo DOC). The grapes are vinified without the skins or by limiting the fermentation with skins to a few hours. Cerasuolo d’Abruzzo is characterised by a pink cherry colour, called Cirici, Cirice or Cirasce in dialect. Cerasuolo d’Abruzzo DOC is a fresh rosé wine, with a balanced acidity – between 5,5 and 6 g/l – and a good alcohol content, between 12 and 13 % vol.
Montepulciano, the basic vine variety for the production of Cerasuolo d’Abruzzo DOC, is characterisied by the presence of antioxidants which makes it one of the longest aged rosé wines in Italy.
