Grapes: Corvina gentile, Corvina grossa, Rondinella e Molinara
The Press: In February the grapes are removed from the crates, analyzed and then moved to a soft press.
Fermentation: Wine making in steel with a checked temperature and in contact with the skins for about 40 days.
Ageing: Before 24 months and then in the bottle 8 months before being put in the market.
Pairings: Great with meat and ripened cheese.
Serving temperature: 16 – 18 C°
