Grapes: Corvina Gentile, Corvina Grossa, Rondinella, Molinara
The press: soft horizontal press at low temperature
Fermentation: Vinification in steel at checked temperature with a following CRIOMACERAZIONE with handing milling
Organoleptic Features: An intense shade of ruby red with purlish nuances. Its flavour is rich of red fruits, in particular ripe cherry. Feelings of withering typical of Ripasso. Good spicing with notes of black pepper and nutmeg
Pairings: salami and cheese. Good with main course with meat sauces and meat dishes.
Serving temperature: 14 – 16 C°
